Why not make a cup holder with an device similar to a Camera Iris on top so you can adjust the size of the bottle/cup you can hold at will.

There is already certain cupholders in cars that have a fixed bottom with either side that retracts by spring, a fold-down tab or simply a piece of flexible foam.
