It seems as thought everytime I do laundry, it takes a different amount of cycles in the dryer to completely dry my clothes. My dryer doesn't have a chart/scale to determine how many articles of clothing/the weight of clothing it will dry within one cycle, two cycles, etc. So, why not?

It is probable that different types of cloth have different absorbent qualities for water so it is unlikely that mere weight evaluation would indicate the quantity of water to be removed by dryer cycles.
You can always set the timer for the max time and walk away. The laundry will be dry when you come back.
Or, this solution, gleaned from years of experience. . .
Have your wife do the laundry. . . Mine has tried to teach me the idiocyncrasies of sorting, temperature ranges, detergent & bleach amounts, dryer settings, etc. Believe me, if you make her favorite white sweater pink or shrink enough times she will insist on taking over the laundry. My easiest out is not using fabric softener on the towels. Drives her over the edge every time. ;-)
