I hate when people scracth the side of my car. People don't watch their door hitting the car next to them. So installing a 360 degree camera and record it when there is a physical shock to the car would prevent people from being careless and also be liable for damages. Take away point here is that, the recording would have to last for at least 30-60 minutes. Think about it. People who hit your car, will either be parking or leaving the lot. Hopefully they will not be sitting there until the recording stops.

good idea - but extend it to driving crimes, like road rage, carjacking, dangerous driving and crimes against persons entering their parked cars whatnot - then such a hidden camera might serve to deter more than just keying-sorts of crime. Such a camera with an encoded GPS signal could provide substantial evidence in a courtroom.
It would be useful to simply record the view forward when the brakes are applied, this alone would be worth the cost of installation.
Or, four miniature digital cameras built into the rear-view mirror housing, each camera with wide-angle lens covering 90 degrees of view.Have the oldest photo files overwritten every 30 minutes or so, so that, like an airplane flight recorder, the last 30 minutes of travel are recorded.
Or, it might be possible to record even more time at lower resolution; If the mirror/camera array has a removeable storage media, the media card could be removed after each trip and replaced with a blank one, thus archiving the trip.
Doable, yes,I have a 1.3 mp camera/camcorder that's not much bigger than my thumb, 4 of them would fit easily into a rearview mirror housing.
