A few DVDs of movies already do a little of this: provide annotations that you can jump to that expand on a point in the movie or a technique used in production. Especially for classic films, one could go nuts with this idea.

I'd watch an annotated "Notorious" pointing out all the tricks Hitchcock used and all that went into each scene. In effects-heavy movies, a lot of folks might want to take apart complex shots to learn how they were done.
