Set up a company that will store large gifts (e.g. cars, big-screen TVs, etc) and deliver them to the specified address at an exact date and time, with a big red bow tied around it.

Example: You buy a big-screen TV for Dad's birthday. Big Red Bow will keep it in storage and deliver it to Dad's doorstep at 7:00am on his birthday.

The big red bow is included in the base price. Optional items might include:-a giant personalized greeting card-installation of major appliances

Big Red Bow would also provide (for a fee) unpacking and assembly services for large items that come in pieces (e.g. swing sets).

isn't that called "fedex" ? I realize that the red bow is missing, but wouldn't a red-bow delayed delivery fedex do the trick?

I suppose FedEx has something similar, although probably not with the sort of timing and presentation that would come with this service. I was thinking of this being more of a storage and delivery service than a courier service. If you were going to, for example, buy out an existing company to use as a basis for offering this service, I'd be looking at moving or temporary storage companies.

A better idea, would be a JIT company that would remove pre-purchased stock from a wharehouse or retailer (in the interim, they would hold it, in conditions and security suitable for the product), apply the gift packaging, and deliver it.

One of the problems of retailing is that a very large percentage of annual sales occurs at Christmas time and the rest of the year is kind of dead by comparison. A variation of your idea would be to take advantage of sales throughout the year to be delivered in the holiday season. Although this might require supplemental storage space for the retailer, perhaps a third party could handle that end of it plus the timed delivery so that retail sales for holidays could take place throughout the year.
