A simple leverage latch is less complicated
It would be nice if the old hubby atleast operates the remote to openfridge door while the old lady walks in with both hands full towards thefridge
Another thread on fridge reform pointed out that some fridges used to have a step-on treadle that unlatched and popped open the door. This would seem easier to access than a beeper if your hands are full.
I don't think an actual remote is necessary, and it could be a problem. You might open the door accidentally without realizing it. Imaging if you walked into your kitchen in the morning and found that you had accidentally open the fridge last night. Also, a remote can easily get lost.
Rather than a remote, you could just put a button on the fridge that opens and closes the door with a motor. That might actually be handy.
