Today’s eaters have complex food allergies, religious prohibitions, and specific food preferences. Why do airlines try to force us into boxes? It makes our lives difficult as we navigate vague category descriptions. It also hurts airline customer service, profitability, and efficiency when our flights change. By switching to a la carte meals ordered in advance, airlines can create a more personalized experience and boost customer satisfaction. Consider a customer purchasing online or over the phone: she can be given several options for sandwiches, salads, snacks, and desserts. Customers could choose "no dessert," or request two salads. Parents can make sure their children have food they will eat. A la carte would also make it easier to meet customer meal needs if flights change through different combinations. Further, airlines can meet environmental concerns by creating less waste.

I would love to order a la carte on airplanes, so I don't waste any food. I hope airlines could figure out a way to do this and still keep turnaround times at the gate short.
I agree. I always request a special order meal in advance of international travel. I typically get it, but never know what to expect whatsoever. The optoins they have a fairly good, but it would be nice if I could just mix and match a bit more.
