Letting two people co-sign half a loan apiece would spread the risk tied to the same piece of collateral.

Terrific. Even better would be to allow a co-signer to specify an upper limit of liability. Then it would be up to the loan-seeker to get enough additional co-signers to reach the number needed by the creditor.
