Believe it or not you can have your pie and eat it too.

Pizza can be a health food if you use whole grain flour, low fat soy cheese and top it with seafood like Clams,Shrimp, Calamari,add Vegies, olive oil, fresh garlic, and you have a delicious wholesome treat.

Maybe one of the major Pizza chains will get wind of this. there are legions of health conscious people who will line up to buy these Pizzas

Here in New Haven, many pizzas are made without Mozzarella (just a sprinkling of parmegon). Indeed, the most famous pizza is clam pizza which uses a white sauce (olive oil and garlic) and no mozzerella. So other than the whole grain flour, it exists and tastes great.

I have struggled with this one for a while. I love pizza and would like to open a pizza place, but I believe that 'saleable' pizza has to be unhealthy to be profitable.

ALL of the "great" pizzas- Lombardi's, Sally's, Pepe's etc. are derivatives of Authentic Neapolitan Pizza. [briefly] This means that the dough is made with low protein flour, water, salt and yeast while the sauce is made with san marzano tomatoes, the cheese used is fresh mozarella (preferably from buffalo milk) and parmesan. Also, these exceptional pizzas are cooked with coal or wood burning ovens.

Unfortunately, given the choice between tasty and healthy, consumers choose tasty, about 95% of the time. Note the regrettable demise of Northwest's mexican fast food phenom Macheezmo Mouse.

That being said, here is my outline of the best possible pizza that could be considered healthful (in my non-professional opinion).

1. Whole Wheat, btw, is argued by many to not be all that healthy (see www.mercola.com for details). So, I would probably have to recommend using a Sprouted Grain for the crust.

2. Naturally leavened (aka sourdough) is a healthier alternative to commercial yeast and is more appealing to many palates anyway.

3. As for cheese, Soy Cheese tastes terrible and nobody would ever order it twice. However, another commenter makes the good point that cheese isn't really necessary. In fact, one of the best and most popular pizzas in Naples is the "Marinara" which is generally just tomato sauce with dried oregano, olive oil and salt.Once again, some [refer again to www.mercola.com], caution against eating soy that is not fermented [tempeh].The good news is that truly good cheese may also be healthful, however it should be made from the unpasteurized milk of grass-fed cows or buffaloes (tough, but not impossible to source- though prepare to spend $). Grass-feeding ensures a proper balance of omega 3 to omega 6 fats and also will keep the animal healthy without use of antibiotics.

4. The sauce is the easiest part, not much need change here as tomatoes are generally not deleterious to health. The most healthful and delicious tomatoes would be dry-farmed and indeterminate versions of San Marzano's and/or Early Girls (however many heirloom varieties will be equally as tasty).

5. Toppings that are healthul and tasty would include: (all organic in the very least, of course) spinach, arugula, fig, onion, mushrooms (shitake, not regular button), red pepper, grass-fed hamburger, garlic, lamb sausage.Not healthy: clams (toxic), pepperoni or prosciutto (bad fat), shrimp (high in triglycerides and toxic)

Bottom line- A healthful pizza (or more accurately, "a less harmful pizza") will be significantly more difficult and more expensive to produce and will likely not be appreciated by the market such that it would prove profitable. The best chance for success is probably as a frozen food sold at Whole Foods.

It ain't the food that is unhealthy, it's the appetite.

Personally I have a simple attitude to food. I cook, from, what I understand in the US is called, from scratch.

Between us me and my wife cook every day, and we are both busy professionals with a baby and toddler.

Last night we had baked mackerel (step one, cut off heads and tail...) with lemon and ginger, mashed potatoes with butter and milk, and runner beans. From stepping into the kitchen to eating, 35mins.

This gives us complete control over my diet, and when I do eat fast food etc, it is a small proportion of my intake, and thus can be as unhealthy as you like.

I eat modest portions - enough to deal with the hunger, no more, no less. I rarely snack.

If I make (or am served) too much, I leave what I don't need.

Could there be a market for a healthy piza? Yes. But would it actually be helping people much unless they change their lifestyle in other ways, no. Do occasional current pizzas harm those who already lead otherwise healthy lives, no.

In light of the recent discovery that wheat/gluten is much more harmful to most people than originally thought, it would be great to have the crust made from rice flour, oat flour, or at least a reduced gluten-based flour such as spelt. I know by experience (I suffer from wheat AND gluten intolerance) that celiacs are not the only people who cannot eat wheat.

I propose a pizza made of a combo rice/oat flour with lots of veggies, some meat, tomato sauce, and a tasty healthy cheese. Yum, yum! I'd buy it by the carload!
